Snowberry Bliss Bars

These are a festive fusion of golden blondie goodness, studded with tart cranberries and creamy white chocolate chunks. Topped with a velvety white frosting and a drizzle of holiday cheer, these bars are like a winter wonderland in every bite-perfect for celebrating the season!

Ingredients:

1 c. grassfed butter, melted

2 pastured eggs

1 tsp. vanilla extract (or paste)

1/2 tsp. ground ginger

1 tsp. baking powder

1/2 tsp Redmonds salt

2 c. King Arthur GF flour

1 c. Enjoy Life White Chocolate Chips

3/4 c. dried cranberries

Frosting:

8 oz. cream cheese, softened

1.5 c. organic powdered sugar

1/2 tsp. vanilla extract

1/3 c. dried cranberries, chopped

white chocolate melted for drizzling

Directions:

Preheat oven to 350 degrees F. Line a 13x9 inch rimmed cookie sheet with parchment paper. Beat together melted butter and brown sugar over medium speed with an electric mixer. Add in eggs and 1 tsp vanilla extract and beat until mixed well. Add in ground ginger, baking powder, salt, and flour, beating until just blended. Stir in white chocolate chips and cranberries by hand. Spread evenly into the bottom of prepared pan. Bake in preheated oven for 18-22 minutes until set and golden brown at the edges. Cool on wire rack completely then frost. To make the frosting: beat cream cheese and powdered sugar together with an electric mixer until smooth and creamy. Add 1/2 vanilla extract and mix well. Sprinkle with chopped cranberries and drizzle white chocolate over the top with a fork.
