Back to School Pumpkin Protein Balls

Slowly the sun is setting sooner and there a slight chill to the air. Back to school is upon us and the challenge of healthy snacks. We love these protein bites for a quick easy breakfast or snack. They travel well and are incredibly easy to make!

Ingredients:

1/2 c. organic pumpkin puree

1/4 c. almond (or cashew) butter

2 Tbsp pure maple syrup

2 tsp pumpkin pie spice

2 tsp nutmeg

1.5 c. gluten free oats

1 c. vanilla protein powder (we like Vital Proteins)

1/3 c. Enjoy Life chocolate chips

Add the pumpkin puree, almond butter, pure maple syrup, pumpkin pie spice, and nutmeg to a large mixing bowl. After combining mix in the oats, vanilla protein powder, and chocolate chips. Place the mixture in the refrigerator to chill for 30 minutes. Using an ice cream scoop, roll into balls. Enjoy and store in the fridge or freezer.
