Southwest Chicken Enchilada Casserole

Ingredients:

2 containers La Preferida Organic Green Enchilada Sauce

1 10.5 oz Pacific Foods Organic Cream of Chicken Soup

1 8 oz. Organic Valley Sour Cream

4 cups of Shredded Organic Chicken

1 4 oz. can diced green chiles

1 14 oz. bag of Organic Mozzarella Cheese

1 bag La Tortilla Cassava Tortillas

To make the enchilada sauce, mix the two containers of enchilada sauce with the sour cream and cream of chicken soup. In a separate bowl, add the diced green chiles to the chicken. Take 1/2 cup of the sauce and pour into the bottom of a 9x13 pan. Fill the tortillas with cheese and the chicken mixture until all of the tortillas are rolled. Add the remaining chicken mixture to the top of the tortillas and remaining enchilada sauce. Bake at 350 for 20 minutes and then top with the rest of the cheese for an additional 15-20 minutes.
