Healthier “Chicky-Fila-A” Nugs

My son absolutely would eat “chicky” nugs everyday if he had the chance. He rarely gets fast food but does love Chick-Fil-A. This is a MUCH healthier version that is quick and easy to make at home.

Ingredients:

2-3 lbs. of organic chicken tenders-cut into squares/1-2” pieces

1 cup of dill pickle juice

1/4 cup of grassfed milk

1 cup gluten free flour

1 cup of cornmeal

3 Tbsp. powdered sugar

2 tsp. salt

2 tsp. paprila

1 tsp. baking powder

1 tsp. black pepper

Avocado Oil for Deep Frying

Instructions:

Place chicken in container along with pickle juice and milk to marinate for 30 minutes or longer. When ready to cook, heat oil to 350 degrees. Combine flour, cornmeal, powdered sugar, garlic powder, paprika, salt and pepper in bowl and mix. Dip each chicken tender into the flour mixture and add to the fryer. Cook in small batches for 3-5 minutes until golden brown.
