Gluten Free Monster Cookies

This is one of my favorite recipes. Classic nostalgia but a slightly healthier version!

Ingredients:

1/2 c. softened grassfed butter

1 cup packed organic brown sugar

1 cup organic turbinado sugar

1.5 cups organic peanut butter (I like crunchy)

3 large pasutred eggs

2 tsp. baking soda

1 tsp. pure vanilla extract

4.5 cups Bobs gluten free rolled oats

1 cup Enjoy Life mini chocolate chips

1 cup Unreal Chocolate gems

Instructions:

Preheat oven to 350. Line cookie sheet with parchment paper. In the bowl of your electric mixer, cream together butter, sugars, peanut b butter and eggs until light. Add baking soda, vanilla extract and gluten free oats and mix on low speed. Stir in chocolate chips and gems. Use a cookie scoop to scoop rounded balls of dough and place on cookie sheets. Bake at 350 for 10-12 minutes (these cookies are better slightly under-cooked than overcooked). Remove and let cool on wire racks. Enjoy and refrigerate (or freeze) any leftovers!
