Mediterranean Greek Summer Salad

This is such an easy salad to make and have for a few days. Full of antioxidants, healthy fats and anti-inflammatory components. You can always add to or take away any ingredient to personalize it for your tastes!

Ingredients:

  • 4 c of organic cherry tomatoes chopped

  • 1 large organic cucumber, peeled and diced

  • 1 15-ounce can organic garbanzo beans, drained and rinsed

  • 7 oz Greek feta, diced

  • 1/2 c roughly chopped pistachios, shelled

  • 1/2 c pitted green olives, roughly chopped

  • 1 Tbsp. drained capers

  • 1/2 Tbsp. fresh organic mint

  • 1/3 c extra virgin olive oil

  • Zest and juice of 1 lemon

  • 1 Tbsp red wine vinegar

  • 1 garlic clove, grated

  • Pinch sugar, Himalayan sea salt and pepper

In a large bowl, combine the tomatoes, cucumber, garbanzo beans, feta, pistachios, olives, capers, mint and toss. In a small container, combine the olive oil, lemon zest and juice, vinegar, garlic, sugar, salt, and pepper. Whisk until smooth and emulsified. Portion out the salad and dress!
